HR Best Practice:

When an incident occurs and an investigation is necessary, have all parties involved document what happened. This will help with understanding what exactly happened and will help the investigator with potential follow up questions for resolution.

Safety Topic: Distracted Driving

Distracted driving is the act of driving while engaged in other activities—such as looking after children, texting, talking on the phone or to a passenger, eating or any activity that take the driver’s attention away from the road. All distractions compromise the safety of the driver, passengers, bystanders and those in other vehicles. The popularity of mobile devices has had some unintended and even dangerous consequences. We now know that mobile communications are linked to a significant increase in distracted driving, resulting in injury and loss of life. The Department of Transportation stated, “text messaging while driving creates a crash risk 23 times higher than driving while not distracted. Despite these statistics, more than 50% of drivers have admitted to sending or receiving text messages at least once every time they drive…”

NATIONAL LOBSTER NEWBURG DAY

March 25th is the 24 hours designated as National Lobster Newburg Day.    Lobster Newburg is an American seafood dish made with lobster, butter, cream, cognac, sherry, eggs and cayenne pepper.  It is an elegant and classic dish enjoyed by many since the late 1800s. 

Debuting in 1876 at Delmonico’s, a fine New York restaurant, this dish was invented by sea captain Ben Wenburg.  He demonstrated the recipe to restaurant manager Charles Delmonico and refinements were made by chef Charles Ranhofer. The creation was then added to the restaurant’s menu as Lobster a la Wenburg.  The dish grew fast in popularity.

There was an argument between Wenburg and manager Charles Delmonica which caused the dish to be removed from the menu, but after many requests from patrons, it returned with a new name. The entree came to be known as Lobster Newburg.

“Use fresh lobster if available, but 2 (6 ounce) cans of lobster may be used instead. This recipe is rich and delicious. If you do not like spicy food, use paprika in place of cayenne pepper. Serve hot, over buttered toast slices.”

Ingredients
  • 2 egg yolks, beaten
  • 1/2 cup heavy cream
  • 1/4 cup butter or margarine
  • 2 tablespoons dry sherry or Madeira
  • 1/2 teaspoon salt
  • 1 pinch cayenne pepper
  • 1 pinch ground nutmeg
  • 3/4 pound cooked lobster meat, broken into chunks
Directions
  1. In a small bowl, whisk together egg yolks and heavy cream until well blended. Set aside. Melt butter in a saucepan over low heat. Stir in the egg yolk mixture and sherry. Cook, stirring constantly until the mixture thickens. Do not boil.
  2. Remove from heat, and season with salt, cayenne, and nutmeg. Add lobster. Return pan to low heat, and cook gently until heated through. Serve hot over slices of buttered toast.
