Program Overview

The senior management of the Sports and Entertainment Lines of Business has reviewed the impact of standardization within the draft and packaged goods aspects of the business and has developed criteria to base selection and pricing.

Draft Beer

In conjunction with our major draft beer partners, we have built product specifications, tap ratios, an in certain cate- gories, proposed pricing. Included in this section of the Adult Beverage Program will be a listing of our specified draft beers. You will need to develop a plan for draft beer within your location that divides the specified categories of
beer to obtain the following ratio. These groupings are designed to be category-specific rather than brand-specific to accommodate sponsorship obligations that may be forced upon us.

Package Beer

With draft beer being utilized the most on the concession level, please remember that in some cases it may be wiser to use packaged beers to support the draft offering rather than under-utilize a group of taps to service a special offering. Price variance should be considered between the Domestic Lights and the Craft offerings. The guest is expecting to pay a difference of $2.00 for craft and specialty beer. This is the delta that is seen in establishments outside of our industry and is something that we should work toward. As discussed, there will be much less pressure to increase a price on the craft beers then there would be to increase the Domestic Light items.

Hawking / Vending

Your location has the ability to utilize any of the packaged brands for hawking or vending from ice-chilled stations. You will notice that we have not specified any particular size or container.

Club Levels

Based on the draft beer tap ratios that we used for the concession model, we would expect the percentages would be weighted heavier to craft and import offerings. We believe that the $2.00 extra for these products is extremely appropriate and can develop a sizable increase in your profitability. The Club levels should utilize packaged goods to support the draft products and to develop a wider offering than the availability in other areas of the building.

Suites

Draft beer isn’t readily available within the majority of suites, so it’s important to maximize the offering of your packaged goods. The expanded offering of packaged goods should be made available to the suite holders to give them the widest product selection. This expanded line shouldn’t represent large amounts of inventories. We want to be able to offer the wide range of product, but it’s not necessary to inventory pallets of each product.
